After my run today I wanted something sweet so I decided to whip up some healthy cupcakes. I wanted to swap out the butter for something with a bit more protein and the Greek Yogurt base turned out so amazing I just kept making more flavors! Greek Yogurt makes them moist, rich and adds 3g of protein while making them (except where I added nuts) completely fat free! You can use the base recipe of yogurt, Truvia, egg whites, flour, soy milk, vanilla & salt then add whatever other fillings, extracts or flavors you like (next on my list is chocolate raspberry). Next time you want a sweet treat give these a try, they’re really easy to make and perfect for whatever your sweet tooth desires. :)

Really want to share this recipe with you all for these vegan Cocoa Pancakes that I made the other day! They were delicious. I put white chocolate peanut butter on them as well. So delicious.
Ingredients:
- 1 cup non-dairy milk
- 1 tsp apple cider vinegar
- 1 cup light spelt flour (or whole wheat, all purpose etc)
- 2 tsp baking powder
- ¼ cup + 2 tbsp cacao/cocoa powder
- 1/2 tsp cinnamon
- pinch of salt
- 3 tbsp maple syrup (or agave nectar) plus extra for serving
- 1/4 cup liquid coconut oil (or other oil)
- 1.5 tsp vanilla extract
Directions:
- Mix the non-dairy milk and apple cider vinegar in a small bowl and set aside to curdle, about 5 minutes.
- Mix the flour, baking powder, cocoa powder, cinnamon and salt together in a large bowl until combined. Add the curdled milk, maple syrup, coconut oil and vanilla. Mix with a wooden spoon until just combined. It should be a tad loose-seeming.
- Heat a large, non-stick pan over medium-low heat. Drop ¼ cup measures of the batter into the pan (not too many at a time!). When bubbles start to peak through the surface and you see a bit of light browning/crisping up on the underside, flip the pancakes over carefully, about 1-2 minutes. Repeat for the other side, remove from the pan and set aside on a covered plate to keep warm.

Healthy Banana Cookies
Ingredients
- 3 ripe bananas
- 2 cups rolled oats
- 1 cup dates, pitted and chopped
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla.
- Mix well, and allow to sit for 15 minutes.
- Drop by teaspoonfuls onto an ungreased cookie sheet.
- Bake for 20 minutes in the preheated oven, or until lightly brown.

Made vegan pancakes this morning! They turned out so much better than the last time I made them. So good! And only about 76 calories each :D
Here’s what I used:
-1 1/4 cup all purpose flour
- 2 tsp of baking powder
- 1 tbs of Truvia
- 1 tbs of canola oil
- 1/2 tsp of salt
- Mix until just blended, will be a tad lumpy
- Use 1/4 cup batter for each pancake
- Makes about 8 pancakesDefinitely making these again, and experimenting with more favors and toppings :)
